Ingredients:
500g casarecce pasta
500g beef steak mince
250g Fresh cherry or plum tomatoes
1 small red onion
3 garlic cloves crushed
250g butter
Basil
1 vegetable stock cube -1/2 cup of water (I use kallo)
Optional - grated parmesan cheese
Seasonings:
1 oxo beef cube
1 tsp paprika
1 tsp cayenne
salt & pepper to tast
Method:
Bring to boil a pot of salted water and add casarecce pasta. This will take around 12 minutes to cook, unless you like it al dente then remove from stove after 10 minutes.
Whilst the pasta cooks, slice an onion and crush the garlic cloves. Using a wok/ saucepan, add butter, onions, garlic and sauté.
Halve tomatoes and add to wok. Ensure your butter isn't burning by stirring from time to time. You can use a spatula to lightly crush the tomatoes.
Create your stock by dropping the stock cube into the centre of the wok and add 1/2 a cup of hot water. Gently mix the newly formed sauce till cube has fully dissolved. Add in some basil leaves, stir and allow sauce to simmer
Add in mince and all seasonings detailed above. Stir until mince is submerged in sauce. In a few minutes the mince will go from pink to brown (which means its now cooked!). Have a taste, add more salt and pepper if need be.
Drain pasta and rinse with cold water to stop any further cooking. Add to pasta to wok and stir. You can add more basil leaves if you want more of a herby touch!
Sprinkle grated parmesan cheese and serve!
